On-staff dietitian promotes healthy menu options

UNI Department of Residence has a dietitian on staff.  Lisa Krausman promotes healthy menus, provides nutrition information and works with students on individual dietary issues.  An example of information available to students because of Lisa's expertise is the "Top Ten Healthy Choice" menu items currently featured in UNI dining facilities.  Menu options earning a "Top Ten" designation meet at least three of the following guidelines:

  • Fat is 30 percent or less of the total calories
  • Saturated fat is 10 percent or less of the total calories
  • 0 Trans Fat
  • Added sugars are less than 25 percent of total calories
  • Whole grain as a major ingredient
  • Whole fruit, whole vegetable and fruit juice
  • Sodium is less than 480 mg per serving or less than 600 mg for entrees or sandwiches
  • Contains no high fructose corn syrup
  • No preservatives

"Top Ten Healthy Choice" items are featured at Prexy's in Maucker Union, Biscotti's in Redeker Center and 23rd Street Market in Commons.  The UNI Department of Residence dietitian may be contacted through the Nutrition Information page on the Department of Residence website.
